Orange Muffins with GUTsy Captain Kombucha Coconut

Ingredients - Serves 8 to 10 muffins

1 tea cup of flour
1 tea cup of almond flour
1/3 tea cup of Yellow sugar
1/3 tea cup of coconut sugar
1 tsp baking powder
1 tsp bicarbonate of soda
2 medium eggs
1/2 tea cup of Orange juice
1/2 tea cup of GUTsy Captain Coconut Kombucha
1/2 tea cup of melted coconut oil
2 tsp vanilla extract
Shredded coconut



  1. Heat the oven to 190°C. Grease a muffin tin with a little olive oil or melted coconut oil. If you have paper cups, place them in the cavity. Reserve.
  2. In a large bowl, mix the flours, baking powder, baking soda and sugars. Add the eggs, orange juice, coconut oil, GUTsy Captain Coconut Kombucha, vanilla extract and stir just until well blended. Do not overmix or the muffins will have a harder consistency.
  3. Immediately pour the mixture into the hollows of the muffin tin. Bake for 15 to 20 minutes and bake until a toothpick inserted in the center of a muffin comes out*
  4. Remove from oven and let cool slightly. Sprinkle shredded coconut on top and serve alongside your favorite GUTsy Captain Kombucha!

*Note: if your muffins start to get slightly burnt, place aluminum foil over the tin.
